Vegan Nachos. Yes, milk-less cheese and soy chicken. You still with me?

I respect people’s lifestyle choices. However, I like to bury my face into baby back ribs and pour bacon fat over my veggies. With that being said, the fake meat was my favorite part of these nachos. It was fried “chicken” so while it would never pass as real meat, it was still quite tasty. The cheese was the usual plastic un-meltable mess. Honestly, if you are not making a vegan queso, don’t even try with vegan cheddar cheese. It just looked like jullianed carrot sticks on my ‘chos and that would have certainly been more preferable.

My big issue was the airy, mushy chips. The chips dissolved in your mouth, similar to the way cheese puffs have that initial crunch then sogginess. They weren’t your typical tortilla chip which is odd. Why change the tortilla recipe for vegan ‘chos? Aren’t they already vegan? Now you are just messing with a good thing for the sake of messing with it.
