After a series of recommendations from Amy Cao and others, I decided I needed to go to Baby Bo’s and get hot and heavy with a plate of nachos. With the holidays around the corner, a lot of the Nacho Gang is all booked up preparing, but Maraysa was able to join me.

When I got there, the place was packed, so I sat at the bar and ordered a margarita.  To my delight, it was only $4.25. Maraysa arrived shortly after, had a margarita of her own and then we were seated. Added to our order of Skirt Steak Nachos was a Chipotle Pumpkin soup and chicken quesadilla. We ate tasty chips and a solid pico de gallo while we waited. They all came out at once.

This plate is part plate, part cheese. I love cheese, but I have to admit right off the bat that I was overwhelmed by the amount of cheese on these nachos. I thought my hand was going to get stuck. And with the chips we ate earlier, we thought we’d have sturdy nachos, but with the pinto/refried bean, we were left with chips that couldn’t handle the pressure. With all that negativity comes a few positives, the guacamole was plentiful and the skirt steak was tasty.

I’ll return here for a margarita if I’m in the area, but not the nachos.

    Sorry to read about your cheese overload, but I do recommend the red chile chicken flautas & mini beef burritos. I get those delivered to my door though, so can’t vouch for the experience of eating it there 🙂 Either way, happy holidays, Lee!

    i too am a die-hard baby bo delivery-eater. i’ve had a burrito, one of the chicken entrees and the guac and they don’t fail to disappoint. seems worth the trip for a burrito under five bucks!
