Nachos News Network: Corn Salsa

Welcome, welcome, welcome to episode two of the Nacho News Network. Today, we bring you another delicious and simple recipe that will make your friends and family respect you, OR at least ask you to come over with more of this recipe. This recipe is for a corn-based salsa because we all know salsa does not equal tomatoes. Marcia brought the knowledge, I ask silly questions and in the end we eat.

Previously: Quick and Easy Mango Salsa

3 ears of corn
1 small orange bell pepper
1 bunch of spring onions
1 jalapeño
3 cloves of garlic
1-2 ounces of rice vinegar
1/2 teaspoon of salt

Cook the corn in any way you’d like. Cut the corn off the cob and add to a bowl. Dice pepper, spring onions, jalapeño, and garlic. Mix each into bowl. While stirring, pour in 1-2 ounces of rice vinegar. Add 1/2 teaspoon of salt or more, to taste.
