X Marks The Guac (recipe)

Peter Borenstein of the brilliant Tu Guac Shakur was invited to bring his guacamole brilliance to Guac Rock. And boy did he represent. He made a classic guac, using picked jalapenos as his secret weapon. To prepare for a small party, try this one on for size.

4 avocados
1 tomato
1 red onion
salt/pepper to taste
1 lime, quartered
pickled jalapenos and its juice
The secret ingredient here, and what gives it its kick, is the pickled jalapenos. I LOVE pickled jalapenos and really anything that has vinegar in it so this particular guacamole really makes my heart sing.

Get the avocados, tomato and red onion chopped and into a mixing bowl. Add salt, pepper to taste. Then drench the whole mixture with the limes’ juice.

Finally, chop up the pickled jalapenos and put them on top of this mountain of ingredients. Then, from the jar that they came from, pour some of the pickled jalapeno juice on top of everything. The more you put in, the more ZING it’ll have until it is uneatable so BEWARE. Shmoosh everything and you have my guacamole.
