Mole Slaw (recipe)

So I got the heartbreaking email at approximately 11 am. Due to forces beyond his control Chris from the skint and 2nd place Guactacular Champion would not be able to attend Guac Rock. Stranded in the LA airport and sweet-talking flight attendants with his guactastic sob story, Chris could not bring his guacamole to the masses aboard the Jewel. Instead, he emailed one of his recipes to help get our creative juices going. His secret ingredient, ginger, really got the night kicked off right. We’ll share the other two recipes the Nachos NY All Stars pulled together at the last minute: The Heath Ledger Memorial Guac and Tequila Mockingbird. But for now here’s Mole Slaw – recipe credit goes to Chris and credit goes to Abby Wambaugh for the coming up with all of the clever names.

Mole Slaw

Jalapeño pepper
Fresh lime juice
Salt + pepper – to taste

Get all your non-avocado ingredients prepared: Dice tomatoes. Chop up some onions. Mince ginger. Seed and mince jalepeno peppers. Finely chop cilantro.
Mash up a few avocados. Don’t overdo it though because everyone likes a chunky guac.
Fold the non-avocado ingredients into the mashed mixture.
Season with lime juice and salt and pepper.

Proportions are up to your tastes but try throwing some ginger in there next time you’re feeling a little adventurous.
