Post Show 'Chos
In the days to come we will bring you video, pictures, and excellent commentary on the “Shows” part of our ‘Chos and Shows evening that began at Union Pool. And the Moneynotes were kind enough to chat with us prior to their show. Lee had an intense one-on-one with their nacho connoisseur, Brian. This washboard and pots player loves his ‘chos and Lee enjoyed catching up with a fellow nacho lover from Pennsylvania. While you wait for that ‘Chos and Shows coverage, let’s recap the post show party which you guessed it, included ‘chos, ‘chos, ‘chos.
Normally after a night of PBR and music I like to just pop a few Advil, curl up in bed, and watch a few episodes of Wings before I drift off to dreamland. However, Julia and I were famished. We also realized we had all the fix-ins for vegetarian nachos. Now I want to go on the record for this nacho creation that it is not a representation of my best work. This was a 2am, thrown together, what do we have in the cupboard kind of meal. We had quality ingredients, just not a lot of them.

First, the chips. Trader Joes, baby. There were three different kinds of chips in one bag. Carrot/Tomato, Spinach/Garlic, and Red Beet/Onion all containing flax seed. The chips on their own were delicious and each had a unique flavor.

On to the toppings. We didn’t have avocados, tomatoes, onions, jalapenos, or really much else. But we did have cheese and soy chorizo. For the cheese we shredded some smoked gouda and threw the plate under the broiler. I will say, I made a decent plate of nachos with what was around. However, the soy chorizo was a little spicy with not much flavor besides the peppery kick. It overwhelmed the gouda flavor. Also I wouldn’t have noticed the various flavors to the chips had I not nibbled on them beforehand. I certainly will throw oguda cheese on future ‘cho creations but I will be careful not to let other ingredients steal the spotlight. Remember, the Irish Nachos. Now there was some good gouda.
